Company History Azienda Agricola Levante was born in 1960; the dairy has been in operation since 2000; cheese is made according to traditional local cheese makers traditions.
Territory Mantuanella hard paste cheese is produced at Azienda Agricola Levante, located north of river Po , in the quiet Padanian Plane , ten minutes away from the ancient town of Mantova.
Market Our cheese is sold to top quality supermarket chains, the best food stores, bars and restaurants. Cheese is packed in wheels or vacuum packed wedges and shipped via refrigerated containers. We ship all over Europe and overseas according to current international regulations. Wheels can be cut in 4 or 8 pieces, then in wedges weighing 4 or 8 kg.. We also sell portions weighing 4 kg, and 8 kgs.. Vacuum packed cheese is sold in portions 1 kg. and 300 gr.. Quality and certificate
Quality Mantuanella has a sweet taste; produced manually according to a strict production process, it contains cow milk obtained from animals fed by organicall grown cereals grown on our own land; all of our animals are fed with GMO free ingredients.
Products Traceability The milk produced on the farm is a non-stressed, top quality product which is processed by using certified whey. The result is a highly valuable hard cheese made according to the oldest local dairy traditions. Everything except inspection happens internally, with no external interference, in perfect balance and respect for the animals - from producer to consumer.

Production Process Production process of Mantuanella italian seasoned cheese: from the raw milk to the process called "Spinatura", which means breaking the curd with a special tool called the "spino"; from the coagulation process to the "Levatura", to the salting process; the last step is the seasoning process. The artisan cheese is preserved at a constant temperature for a period ranging from 16 to 24 months.
Products Presentation Mantuanella is a homemade cheese, ideal to integrate Mediterranean diets, with excellent nutritional values. Mantuanella cheese seasons 14 to 30 months.
Aged Cheese Grand Reserve White Crust Grand reserve is matured 25 to 30 months. Crust is very thick, paste is hard and rigid; taste is slightly salty, full traditional flavour.
Aged Cheese Matured 21-24 months, has a thick black crust. Paste is white, taste is strong with a nutty , fruity flavour.
Seasoned Cheese Hard cheese, matured 18 months. Average weight of one wheel is approx. 36 kgs. Contains: milk, rennet, salt.
Classic Cheese Classic Mantuanella is matured 14-16 months , during which cheese is aged and reaches a thick, taste is fresh, creamy and delicate.
Special format Mantuanella Cubes are an ideal ready-to-eat alternative. Ideal to be served with fruit, white wines and fancy spumantes. Our grated cheese is aged 15-20 months and is packed in very handy, ready-to- use bags.
Goat cheese A selection of more than 35 types of cheeses - from the 100% natural goat cheese, to specialties containing a hint of berries, herbs, spices, flowers, seeds or fruit.
Sheep cheese
Sheep cheese has a unique “old-times” taste; delicate and creamy, it is made with 80% cow milk and 20% sheep milk. Pasteurized ButterFresh pasteurized butter, produced from cow milk obtained by animals fed exclusively with GMO free feds.
