PRESENTATION
Our aged cheese and all our dairy products are made within our premises, according to old cheese-makers traditions and love for healthy, genuine food.
Genuinity is garanteed by traceability. Our cheese is a complete source of nutrients, rich in calcium, vitamins and proteins, recommended for people of all ages to help children’s growth, to ease elderly’s digestion, to provide athletes with extra energy. 

Our cheese, marked with our own trade mark "Mantuanella", is entirely produced within our premises by using milk obtained from our herd of cows; our animals are fed exclusively with hays and grains grown on our land.

Milk produced by our cows is a top quality, non-stressed product; it is processed within our dairy by using certified rennet, to obtain an extremely valuable hard paste cheese.
The ageing process happens within our warehouses, preserving our cheese from any contamination.

ORGANOLEPTIC CHARACTERISTICS – (Cheese aged at least 16 months)

PARAMETER SPECIFICATION
OUTER ASPECT Cylindrical form characterised by a convex circumference, very thick; outer surface is carved with manufacturer "Mantuanella"; Az. Agr. Levante logo and the description: "Az Agr. Levante Mantuanella - does not contain or derives from GMO corn soy or similar". Wheels faces are flat. The crust thickness may vary from 4 to 8mm. and can be coated with specific varnishes or waxes certified for use on foodstuff.
PASTE Paste structure is finely granular, with radial fracture: color is yellowish white, with slightly visible patterns.
TYPE Cow Milk Cheese partially skimmed, hard paste, partially cooked and to be slowly matured.
FORMAT Wheels have the following characteristics:
- Face Diameter cm. 35 - 45 cm
- Height cm. 18 - 25 cm
- Average weight of 1 wheel: about kg. 24 - 40
STOCKING AND PRESERVATION In proper warehouse at a temperature from 15° to 22°C (tolerance +/-2°C) – Relative moisture between 80 and 90%.
SHELF LIFE Ideal shelf-life for human consumption of this product is: starting from 16 months of ageing onwards if properly preserved.
SELLING UNITS Wheels or wedges various sizes (1/4-1/8-gr.1000/500/300).
PACKAGING Only if required, in cardboard boxes, as per customer spcifications.
SHIPPING By refrigerated container pursuant italian laws (D.L. 155/97) or however at a temperature not exceeding 16°C.
QUALITY CONTROL As per Current HACCP regulations – under Local Vet. Jurisdiction ASL - Mantova.
USER DESTINATION Large distribution food product, not for any specific category of consumers.
